Ingredients: 

3 pounds of halved and rinsed baby potatoes, including Peruvian purple, red-skinned, and white-skinned varieties.
 1 large, coarsely chopped red onion. 
12 cloves of garlic. 
2 tablespoons chopped fresh rosemary. 
1/4 cup extra-virgin olive oil. 
1 teaspoon salt. 
1/2 teaspoon ground black pepper.

Directions:

    In a large bowl, combine the potatoes, red onions, garlic, rosemary, olive oil, salt, and pepper. Preheat the oven to 425 degrees F. Spread the potato combination out equally on a baking sheet; 40 to 45 minutes, or until the potatoes are tender, crispy, and browned.
