Instant Pot Beef Stew : instant pot beef stew without potatoes
Tender beef, potatoes, carrots, and flavorful broth cooked in a fraction of the time it takes on the stove.

Ingredients:
2 pounds beef stew meat, cut into 1-inch pieces1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, minced
4 cups beef broth
1 can diced tomatoes, drained
4 carrots, sliced
4 potatoes, chopped into 1-inch pieces
2 stalks celery, sliced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons water
Instructions:
Set your Instant Pot to sauté mode and add the vegetable
oil. When hot, add the beef and brown on all sides.
Add the onion and garlic and sauté for another 2-3 minutes
until softened.
Add the beef broth, diced tomatoes, carrots, potatoes,
celery, thyme, rosemary, salt, and pepper to the Instant Pot.
Close the Instant Pot lid and set the pressure release valve
to the sealing position. Set the Instant Pot to manual high pressure for 35
minutes.
Once the cooking time is complete, allow the Instant Pot to
naturally release pressure for 10 minutes before quick releasing the remaining
pressure.
Mix the cornstarch and water together in a small bowl to
make slurry. Set the Instant Pot to sauté mode and add the slurry to the pot,
stirring until the stew thickens.
Serve hot with crusty bread or biscuits, if desired.
