Ingredients:
2 lbs. ground beef
1 onion, chopped
3 cloves garlic, minced
1 can dice tomatoes (14.5 oz.)
1 cans tomato sauce (8 oz.)
1 can kidney beans drained and rinsed (15 oz.)
1 can black beans, drained and rinsed (15 oz.)
1 green bell pepper, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
Salt and pepper, to taste
Shredded cheddar cheese, for serving
Sour cream, for serving
Chopped fresh cilantro, for garnish
Instructions:
Set your Instant Pot to sauté mode and add the ground beef.
Cook until browned, breaking up the meat with a spoon as it cooks.
Add the onion and garlic to the Instant Pot and sauté for
2-3 minutes until softened.
Add the diced tomatoes, tomato sauce, kidney beans, black
beans, bell pepper, chili powder, cumin, smoked paprika, cayenne pepper, salt,
and pepper to the Instant Pot and stir to combine.
Close the Instant Pot lid and set the pressure release valve
to the sealing position. Set the Instant Pot to manual high pressure for 15
minutes.
Once the cooking time is complete, allow the Instant Pot to
naturally release pressure for 10 minutes before quick releasing the remaining
pressure.
Serve hot with shredded cheddar cheese, sour cream, and
chopped fresh cilantro on top, if desired.
